Chicken meatballs in tomato sauce
Preparation process

Preheat the oven to 200°C.

Meat: Grind the meat, or you can use ground poultry meat from Perutnina Ptuj.

Meatballs: Combine the ground meat with all the other meatball ingredients. Shape into balls (wet your hands slightly to make shaping easier).

Baking meatballs: Place crumpled aluminum foil on a baking tray, then arrange the meatballs on top. The foil prevents them from sitting on a flat surface so they brown better on the bottom. Bake in the preheated oven for 20 minutes.

Sauce: While the meatballs are baking, heat oil and butter in a saucepan. Add onion and cook until softened. Add garlic and ginger, then all the spices for the sauce. Stir and sauté until fragrant. Add tomato passata and coconut milk, then mix again. Simmer for about 10 minutes, or until the meatballs are done. The sauce should become creamy.

Finishing the dish: Season the sauce with salt, taste, and adjust if needed. Add the baked chicken meatballs into the sauce and cook for a few more minutes.

Serving: Garnish with chopped parsley if desired. Serve with rice or pasta. You can also serve with tortillas or naan bread to soak up the sauce.
