Roasted sweet potato, asparagus and sausage from a baking tray

Preparation process

  1. Preheat oven to 200°C.

  2. Prepare ingredients: Peel the sweet potato and cut it into small cubes. Trim the woody ends off the asparagus. Slice the sausages into rounds. Mix all the spices together.

  3. Baking tray: Line a medium baking tray with parchment paper for easier cleaning.

  4. Preparation: Put the sweet potato into a bowl, add oil, and sprinkle with the spice mix. Mix well with clean hands. Spread the sweet potato in a single layer on the tray. Add the asparagus to the same bowl and toss it in the remaining oil and spices. Place it on the tray as well. Add the sliced chicken sausages of Perutnina Ptuj to the tray too.

  5. Baking: Bake for about 15 minutes. The sweet potato should become soft, and the asparagus and sausage nicely roasted. If the sweet potato is still firm, bake a few minutes longer.

  6. Serving: Carefully remove from the oven, divide into portions, sprinkle with chopped parsley, and serve. Add a slice of lemon and a spoon of Greek yogurt or sour cream. Tzatziki sauce also works well. A fresh salad is a great side dish.
